last night i went to kfc. i ordered the buffet. when i went to the bar to load up my plate, there was not one piece of chicken to be found! Shocked i told the gals on duty to bring me some hot, fresh wings. they brought 5 piping hot wings. all i can say is OMG! it must have been right time, right place, and all the stars aligned. it truly did take me back in time. im not saying it was circa 1968, but i have to admit, it was absolutely delicious. i couldnt stop at 5. i says "bring me some more wings", and they did. 5 more to be exact. BAM! hot, fresh, and awesome. i sniffed, and licked, and tasted, and breathed and inhaled my way through the next 5. thats right 10, count em 10 wings. and everyone delicious. one thing i noticed, besides the heavy salt content, ready for this.....sage, lots of sage. which reminds me of tc32 and lumpys review. can we take sage higher? just thinking out loud.

in the past, whilst eating todays kfc, i have tasted the doughnut smell/taste of mace. not last night though. it didnt smell of strong pepper either. just sagey deliciousness, and a little salty. as i said, just thinking out loud. Wink

In between my ranting and raving about KFC's "criminality" in abandoning the original O.R (which they have!), I too have occasionally acknowledged that when it is cooked "right"... It's actually OK... nice even.

Unfortunately though, it is usually dry and overcooked (in my experience anyway)... Having said that, hehe... today's KFC is nothing, when compared with our latest recipes Smile

Now, if only we could get our recipes cooked up in a KFC commercial fryer.......

when i was last at kfc, eating those delectable wings i describe above, i asked the cashier to sale me a bag of spice mix. she was more than willing, but needed the "opportunity". i kept urging her, during the course of my meal. finally she said, "how can i get it out from the kitchen? the bag is SO BIG!". i thought wtf, its 25, 26 ounces. now i think i understand why the chicken was so good, and she had such a hard time "sneaking" me a bag. the 40 oz. spice pack, perhaps?

These are my memories of KFC of the 1960s and 1970s

It was saltier than most fried chicken.
It had lots of sage in it.
The other spices are a blur in my memory.

The chicken was moister than most fried chicken. It definitely was not crispy.

It was lighter in color than most fried chicken.

I'm still waiting for my spice order to arrive so I can try.

Predominately Black/White Pepper Salt and MSG.

Even the red peppers were very sparse in the mix, to prob 1/32 of a tsp per cup of flour mixed with the seasoning.

Then as 99-x, it contains of the pepper for the greater part, then is it possible that the original recipe is different, and that all peppers are replaced by other thing and to produce a similar taste??

someone thought of the green pepper?
